This breakfast pizza is like a portable omelet with health veggies, lean protein and whole grains to get your morning started off right.
Rustic Breakfast Pizza
Makes 2 servings Prep Time 17 min
Ingredients
- 1 mini whole wheat pizza crust, like Boboli’s 8-inch
- 1 small handful mushrooms (try chanterelles or cremini), thinly sliced
- 1 small handful whole-leaf baby spinach
- 2 tbsp crumbled goat cheese
- 2 tbsp olive oil
- 1 egg
- Salt and pepper to taste
- Top the crust with the mushrooms, spinach, and goat cheese.
- Drizzle oil on top and crack the egg into the center.
- Bake the pizza according to package directions, or until the egg is set.
- To serve, quarter it, letting the yolk break. Season with salt and pepper.
