Ok, I’m not exactly a reader, but I just had to try out the Banana Almond Oatmeal Pancakes from FitSugar we featured as our Healthy Recipe of the Week at home and show you how easy and delicious they turn out.
I changed a few things because I didn’t feel like going to the store so I used walnuts instead of almonds, added a little vanilla extract and used 1 tbsp of sugar instead of honey. For less calories, you can use Splenda, but I’m trying to cut down on Splenda use after writing this article.
I mashed a banana and tbsp of peanut butter to smooth on top. As weird as it sounds, I’m thinking cottage cheese would be good on top for the next batch.
My pancakes were about 5 in. in diameter, and it made the whopping stack you see in the pic. These were so easy to make, they are an easy weekday breakfast, not the big old weekend production you usually think of when you think pancake breakfast.
